Paramour has rolled out their new autumn menus with an epicurean experience bursting with flavors full of the harvest season. Chef de Cuisine Kyle Johnson is embracing the cooler months with new menu items and twists on the Paramour favorites.
“The change of seasons is what inspires me to cook. Autumn harvest offers some of the best produce around which allows me to create hearty foods that warm the soul especially on a cool, clear night,” says Chef de Cuisine Kyle Johnson. “I’m excited about our Chef’s Daily Degustations option, new this fall, where fresh seasonal ingredients and rich bold flavors will be artfully presented every night.”
The fall-inspired cuisine is noticeable from the start with a bold Gingered Butternut Squash Soup and a tender Crispy Lola Duck with toasted pecans and apple butter. A tempting Flatbread of gruyere, bacon and caramelized onion is masterfully prepared along with ruby red Beets & Burrata share plate with crème friache, golden balsamic and pickled quail eggs. Savor delightful entrées of Chestnut Tortellini with parmesan espuma, mache and field mushrooms or Pan Roasted Chicken with cream leek foam, mushroom puree, pee-wee potatoes and chicken jus. A bounty of fresh seafood offerings also awaits, such as Atlantic Cod with kalamata olives, broccoli rabe and tomato jam, and Grilled Scottish Salmon with almond lentils, caramelized cauliflower and verjus foam.
Perhaps the most notable addition to the menu is the Chef’s Daily Degustation; featuring a four-course Chef tasting menu for the table for $55 per person with an additional wine pairing option for just $30 more per person.
