Chef Luongo’s Watermelon Mint Chutney

Mint Watermelon Chutney Recipe

3C           seedless watermelon, medium dice
1T           ginger, chopped
1T           garlic, minced
1T           poblano chiles, diced
1T           red onion, small dice
1T           brown sugar
2T           Kentucky Bourbon
1T           fresh lime juice
1T           fresh mint, chopped
1T           Cola
1T           vegetable oil
Salt & Pepper 

 
 

In a large sauté pan coated with vegetable oil, sauté the red onion, ginger, peppers, and garlic. Add watermelon for one minute and toss the ingredients together.  Add brown sugar and deglaze with Bourbon and lime juice and add the cola. Let Cool. Finish with fresh chopped mint, salt and pepper. Recipe yields 6 servings
