Nothing says summer like BBQ Sauce

Paramour’s Chef de Cuisine, Kyle Johnson says that nothing spells summer like BBQ sauce:

“During the summer, nothing is better than grilling over wood or charcoal in the backyard with friends, family and some ice cold beers. I love grilling with nature’s best summer ingredients and always prepare a house made BBQ sauce to pair with the meats and to make my own BBQ baked beans. Great BBQ sauce always brings back fond memories of summertime cookouts and is the reason I want to share this recipe with you. Make it on your own or come into Paramour and try it with our Kurobuta Pork Chop with Macerated Golden Raisins, Swiss chard and crispy shallots.”

 BBQ Sauce

8fl oz. Balsamic Vinegar
8fl oz. Apple Cider Vinegar
½ cup Light Brown Sugar
4 tbsp. Worcestershire
3fl oz. Molasses
4fl oz. Lemon Juice
8fl oz. Bourbon
32 oz. Ketchup
1 cup Golden Raisins

Combine the bourbon and sugar in sauce pot and reduce until alcohol is burned off. You can flambé if you wish, just use precaution. After the alcohol is burned off, Turn flame off and add the golden raisins, let soak for 15 minutes or until fully macerated. Combine the rest of ingredients  and puree until smooth in a blender.
